In una ciotola, sciogli la gelatina neutra in 100ml di acqua tiepida e lascia riposare 5 minuti.

Versa in una pentolina la gelatina idratata e scaldala a fuoco basso fino a renderla liquida (senza farla bollire), quindi fai intiepidire.

In una grande ciotola, unisci ricotta magra, yogurt greco e proteine in polvere: mescola energicamente con una frusta fino a ottenere una crema liscia e omogenea.

Aggiungi al composto il succo di limone, il succo di lime, gli zest grattugiati, lo zucchero di canna e l'eritritolo: amalgama bene.

Incorpora delicatamente la gelatina intiepidita alla crema, mescolando con movimenti lenti dal basso verso l'alto.

Tritura i biscotti integrali fino a ottenere una mollica grossolana, quindi versali in una ciotola e mescola con l'olio di cocco fuso fino a formare una sabbia umida.

Distribuisci la base di biscotti sul fondo di una teglia rotonda (Ø 22 cm) coperta di carta da forno, pressandola leggermente con il dorso di un cucchiaio.

Versa la crema di ricotta sulla base e distribuiscila uniformemente con una spatola da pasticceria, livellando bene la superficie.

Riponi in frigorifero per almeno 5 ore (o preferibilmente una notte) finché non è ben rappresa.
