Method

Inizia mettendo l'acqua fredda in una pentola e aggiungi l'alga kombu, lasciando in ammollo per 15 minuti.

Accendi il fuoco a media intensità e porta l'acqua a leggera ebollizione. Rimuovi l'alga kombu e strizzala per estrarre il liquido, poi scartala.

Riporta la pentola sul fuoco e aggiungi i fiocchi di bonito, mescolando bene. Spegni il fuoco e lascia riposare per 5 minuti. Filtra il brodo (dashi) con un colino.
