In una casseruola, porta a ebollizione l'acqua con il burro chiarificato e il sale. Togli dal fuoco e aggiungi la farina di avena e le proteine in polvere, mescolando energicamente fino a ottenere un impasto omogeneo.

Lascia riposare per 3 minuti, poi incorpora l'uovo sbattuto fino a ottenere un composto liscio e lucido.

Trasferisci l'impasto in una sac à poche e forma dei cerchi di circa 8 cm su una teglia rivestita di carta da forno.

Cuoci in forno preriscaldato a 180°C per circa 20 minuti, fino a doratura.

Nel frattempo, prepara la glassa mescolando l'eritritolo con lo yogurt greco e le gocce di estratto di vaniglia.

Una volta sfornati, lascia raffreddare i choux e intingili nella glassa. Lascia asciugare per 2 minuti prima di servire.
