Method

Prepara una ciotola con la cannella in polvere e il miele: mescola bene fino a ottenere una miscela omogenea e profumata.

In una pentola a fondo spesso, scaldi a fuoco medio l'acqua, il burro chiarificato e il sale fino a quando l'acqua inizia a vapori leggeri (non deve bollire).

Togli dal fuoco e aggiungi la farina integrale e le proteine in polvere, mescolando con una spatola di silicone fino a ottenere un impasto liscio e compatto.

Incorpora le uova una alla volta, mescolando vigorosamente fino a renderlo cremoso, poi aggiungi l'estratto di vaniglia.

Trasferisci l'impasto ancora caldo in una tasca da pasticceria con bocchetta a stella di diametro 1,5-2 cm.

Fodera una placca da forno con carta da forno e spruzza leggermente con olio di cocco spray.

Spremi l'impasto sulla placca formando strisce lunghe circa 12 cm, distanziate di 2 cm l'una dall'altra.

Inforna a 200°C per 18-22 minuti finché i churros non diventano dorati e leggermente croccanti ai bordi.

Estrai dal forno e lascia raffreddare per 2 minuti, poi spolvera subito con il composto di cannella e miele.
