Preriscaldare il forno a 185°C e preparare uno stampo per ciambelline in silicone per 8 pezzi, oppure una teglia ricoperta di carta forno.

In una ciotola, mescolare con un cucchiaio di legno il Parmigiano reggiano e la farina proteica, distribuendoli in modo uniforme.

Aggiungere la ricotta fresca, gli albumi, l'olio extravergine e mescolare energicamente fino a ottenere un composto omogeneo.

Incorporare sale, pepe, origano e i cubetti di scamorza, mescolando delicatamente con pochi movimenti.
