A bagnomaria, sciogliere il cioccolato fondente a 70% con l'olio di cocco, mescolando delicatamente fino a ottenere una crema liscia e omogenea.

Togliere dal fuoco e aggiungere le proteine in polvere, il cacao magro, il miele e l'essenza di vaniglia; mescolare bene fino a incorporare completamente la polvere.

Aggiungere un pizzico di sale marino per esaltare i sapori e mescolare ancora.

Trasferire l'impasto in una ciotola e riporre in congelatore per 15 minuti, fino a quando non diventi maneggiabile ma ancora morbido.
