Method

In una pentola capiente, scaldare l'olio extravergine d'oliva a fuoco medio. Aggiungere la cipolla tritata e l'aglio schiacciato, rosolando fino a che non diventano traslucidi, circa 5 minuti.

Aggiungere il timo e la foglia di alloro, mescolando per far sprigionare i profumi, per circa 30 secondi.

Unire le patate novelle tagliate a cubetti e coprire con il brodo vegetale. Portare a ebollizione e poi ridurre la fiamma, lasciando cuocere a fuoco lento per circa 10 minuti, fino a quando le patate non sono tenere.

Aggiungere le vongole pulite e gli spinaci freschi, mescolando bene. Cuocere per altri 5-7 minuti finché le vongole non si aprono e gli spinaci appassiscono.

Aggiustare di sale e pepe prima di servire caldo, eventualmente guarnendo con un po' di pepe nero macinato fresco.
