Method

In una padella antiaderente, scalda l’olio di cocco a fuoco basso. Aggiungi il cocco grattugiato e tostalo per circa 2-3 minuti, fino a quando non è leggermente dorato. Toglilo dal fuoco e mettilo da parte.

Nella stessa padella, aggiungi l’eritritolo e il miele, mescolando a fuoco medio. Aggiungi un cucchiaio d’acqua e porta a ebollizione, mescolando continuamente per circa 3 minuti.

Riduci il fuoco e continua a mescolare finché il composto non inizia a solidificarsi, circa 2 minuti.

Aggiungi il cocco tostato al composto di eritritolo e miele, mescolando bene fino a ottenere un composto omogeneo.

Versa il tutto in una teglia rivestita di carta da forno e livella con una spatola. Lascia raffreddare completamente per circa 20 minuti.

Una volta raffreddato, taglia a quadrati o rettangoli e servi come snack sano.
