Preparare una vaporiera o una pentola con cestello per vapore; riempire di acqua salata e portare a ebollizione.

Nel frattempo, pulire la coda di rospo, eliminarle le interiora e risciacquare sotto acqua fredda; asciugare con carta assorbente e salare leggermente sia all'interno che all'esterno.

Sistemare il pesce nel cestello del vapore e cuocere per 18-20 minuti, fino a quando la polpa si separa facilmente dalla spina dorsale.
