Method

Preriscaldare il forno a 170°C e rivestire uno stampo colomba da 600 g con carta da forno.

In una ciotola pulita, montare gli albumi a neve ferma con una frusta elettrica fino a triplicare di volume (circa 3-4 minuti).

In un'altra ciotola, mescolare la farina integrale, farina di cocco, zucchero di canna, tuorli, burro fuso, rum e yogurt greco fino a ottenere un composto liscio e omogeneo.

Aggiungere le proteine in polvere e il lievito, mescolando delicatamente.

Incorporare gli albumi montati con movimenti lenti dal basso verso l'alto, usando una spatola, fino a ottenere una massa aerea e compatta.

Aggiungere l'ananas disidratato tritato finemente e mescolare con cura.

Versare il composto nello stampo, livellare e cuocere in forno a 170°C per 40 minuti, finché uno stecchino inserito al centro esce pulito.

Estrarre dal forno e lasciare raffreddare completamente nello stampo per almeno 10 minuti.

Sciogliere il cioccolato bianco a bagnomaria con l'olio di cocco, mescolando continuamente.
