Preriscalda il forno a 220°C. Taglia a metà 2 pomodori medi e disponi su carta forno con 1/4 di cipolla e 1 spicchio d'aglio; arrostisci 12-15 minuti fino a caramellazione.

Nel frattempo, cuoci 150g di riso di cavolfiore surgelato in padella antiaderente con 1 cucchiaio d'olio EVO per 5 minuti.

Frulla le verdure arrostite con 2 cucchiai di yogurt greco 0% fino a crema liscia.

In padella, saltare 1/2 peperone serrano tritato per 2 minuti, aggiungere il purè di verdure, il riso di cavolfiore, 40g di carote tagliate a dadini, 30g di piselli freschi e 20g di proteine in polvere neutra mescolate bene.

Cuoci a fuoco medio per 8 minuti, aggiusta di sale e aggiungi coriandolo fresco.

Termina con 30g di formaggio manchego grattugiato e 1 cucchiaio di yogurt greco, mescola fino a scioglimento.
