Preriscaldare il forno a 180°C e rivestire due placche con carta forno.

In una ciotola capiente, mescolare il burro ammorbidito con la pasta di nocciole fino a ottenere un composto cremoso.

Aggiungere lo zucchero di cocco e le uova, uno alla volta, montando bene con una frusta manuale o elektrica. Incorporare la vaniglia in polvere.

In un'altra ciotola, setacciare insieme la farina di mandorle, la farina integrale, le proteine in polvere, il bicarbonato e il sale.

Unire gli ingredienti secchi al composto bagnato, mescolando delicatamente con una spatola fino a ottenere un impasto compatto e omogeneo.

Formare 24 palline di circa 20 g ciascuna e disporle sulle placche, distanziandole di 4 cm.

Cuocere per 8 minuti a 180°C; estrarre e decorare il centro di ogni cookie con una nocciola intera, premendo leggermente.

Riprendere la cottura per altri 6-7 minuti fino a doratura leggera (non devono essere troppo scuri per mantenere la consistenza morbida all'interno).

Togliere dal forno e lasciar raffreddare completamente su una griglia prima di spolverare con cacao amaro.
