Iniziare portando a ebollizione l'acqua e versarla sul cous cous integrale in una ciotola. Coprire e lasciar riposare per circa 5 minuti.

Nel frattempo, grattugiare finemente il cavolfiore e preparare le carote e il cetriolo a dadini.
