Riscalda 1 cucchiaio di olio EVO in una pentola antiaderente, fai rosolare cipolla e aglio tritati finemente. Ritira gli aromi.

Nella stessa pentola, rosola il pilone di pollo e la salsiccia di pollo: irrorali con il ras el hanout (1/4 di cucchiaino), aggiungi la cipolla e l'aglio, sala leggermente e copri con 200 ml di brodo di pollo a basso contenuto di sodio. Cuoci a fuoco medio-basso per 18 minuti.

Intanto, taglia finemente carota, navone, zucchina, sedano e peperone rosso.

Aggiungi le verdure tagliate e i ceci sgocciolati alla pentola, prosegui la cottura per 20 minuti.

In una ciotola, versa il couscous (40 g), aggiungi 80 ml di brodo bollente salato, copri con un panno umido e lascia riposare 5 minuti. Ripassa con una forchetta.

Monta il piatto: couscous sgranato in ciotola, pilone, salsiccia tagliata a rondelle, verdure e 2-3 cucchiai di brodo di cottura.
