Taglia il petto di pollo a cubetti. In una padella antiaderente con 5 ml di olio EVO, rosola il pollo finché non è dorato, poi riservalo.

Nella stessa padella soffriggi cipolla e aglio tritati, aggiungi le verdure tagliate a tronchetti (carota, navone, zucchina), i ceci sgocciolati e 30 g di concentrato di pomodoro diluito in 150 ml di acqua.

Condisci con 1 cucchiaino di ras el hanout, mezza punta di harissa, sale e pepe; aggiungi il pollo e lascia cuocere a fuoco medio coperto per 12 minuti.

Nel frattempo, versa 60 ml di acqua in una pentola, porta a ebollizione, aggiungi 50 g di semola di grano duro, mescola continuamente per 2-3 minuti fino a completo assorbimento.

Sposta la semola in un piatto, versa sopra il brodo e le verdure con il pollo, completa con una salsiccia di pollo magra piccante grigliata a parte e servito in fette.
