Iniziare preparando il craquelin: mescolare il burro di cocco ammorbidito, l'eritritolo, la farina di avena, il cacao e un pizzico di sale. Stendere tra due fogli di carta da forno a uno spessore di 3mm e congelare per 15 minuti.

Per l'impasto choux, portare a ebollizione l'acqua con il burro chiarificato e un pizzico di sale. Aggiungere la farina di avena e mescolare fino a ottenere un composto omogeneo. Lasciar raffreddare per 5 minuti.

Incorporare l'uovo intero e l'albume d'uovo uno alla volta, mescolando bene dopo ogni aggiunta.

Trasferire l'impasto in un sac à poche e formare dei bignè di circa 5-6 cm su una teglia rivestita di carta da forno.

Togliere il craquelin dal congelatore e ritagliare dei cerchi da posizionare sopra i bignè.

Cuocere in forno preriscaldato a 220°C per 8 minuti, poi abbassare la temperatura a 175°C e continuare la cottura per altri 12 minuti fino a doratura.

Lasciar raffreddare completamente, quindi spalmare la base dei choux con il cioccolato fondente fuso e lasciar solidificare.
