In un pentolino antiaderente, versa il latte scremato e il latte di cocco leggero, portandoli quasi a ebollizione a fuoco medio.

In una ciotola, sbatti l'uovo intero con il miele grezzo fino a ottenere un composto omogeneo e chiaro.

Sciogli l'amido di tapioca in 2 cucchiai di acqua fredda, mescolando fino a eliminare i grumi.

Quando il latte raggiunge i 70-80°C (non bollire), versalo lentamente sull'uovo sbattuto continuando a mescolare energicamente per temperare il tuorlo.

Aggiungi la miscela di amido diluito e continua a mescolare.

Trasferisci il composto nel pentolino con il latte rimasto e cuoci a fuoco basso per 8-10 minuti, mescolando costantemente con una frusta, fino a quando la crema non si addensa leggermente.

Togli dal fuoco e aggiungi l'albume proteico (oppure albumi naturali se preferisci), l'olio di cocco vergine, il cocco grattugiato non zuccherato, la vaniglia e un pizzico di sale.
