Method

Lavare le carote, tagliarle a rondelle di mezzo centimetro e metterle in un tegame con il brodo di pollo freddo.

Tritare finemente la cipolla e farla appassire a fuoco medio-basso con l'olio per 2 minuti, finché non diventa traslucida, mescolando.

Aggiungere le carote, il brodo, il rametto di rosmarino intero e portare a bollore. Ridurre il fuoco e cuocere a fuoco moderato per 20 minuti, fino a quando le carote sono completamente tenere.

Scartare il rametto di rosmarino. Unire il latte di mandorla e la tahina, mescolando bene per distribuirla uniformemente.

Frullare il tutto con un frullatore a immersione fino a ottenere una crema liscia e vellutata, circa 2-3 minuti. Se preferisci una consistenza più cremosa, aggiungi altri 50 ml di latte di mandorla.

Assaggiare e regolare di sale e pepe. Finire con una spruzzata di succo di limone fresco.
