Method

Preriscaldare il forno a 190°C. Rivestire una teglia rotonda (Ø 24 cm) con carta forno.

In una ciotola, mescolare la farina integrale, il sale e il dolcificante. Aggiungere il burro freddo a dadini e sfregare con le dita fino a ottenere un composto sabbioso.

Versare l'acqua fredda poco a poco, amalgamando delicatamente fino a formare una palla morbida. Avvolgere in pellicola e riposare 15 minuti in frigorifero.

Stendere l'impasto su una superficie infarinata e adagiarlo nella teglia. Forare leggermente con una forchetta e mettere in frigorifero.

In una ciotola, frullare la ricotta con il miele, l'uovo, la scorza di limone e un pizzico di cannella fino a ottenere una crema liscia e omogenea.

Pelate le mele, togliete il torsolo e affettatele finemente.

Distribuire la crema di ricotta sulla base, livellare con una spatola e disporre le fette di mela in cerchi concentrati sopra, pressandole leggermente.

Cospargere con le noci tritate, le scaglie di cocco e la cannella rimasta.

Cuocere in forno a 190°C per 35-40 minuti, fino a quando la base è dorata e il composto di ricotta è assestato.

Lasciar raffreddare completamente prima di servire. Si conserva in frigorifero fino a 3 giorni.
