Method

Preriscalda il forno a 175°C. In una ciotola, mescola la farina di avena con il burro di mandorle e l'eritritolo fino a ottenere un composto sabbioso. Aggiungi il latte di mandorla e impasta fino a formare una palla.

Stendi l'impasto tra due fogli di carta da forno fino a uno spessore di 4mm e foderare uno stampo monoporzione (Ø 10cm). Riponi in frigorifero per 15 minuti.

Cuoci in forno per 15 minuti, quindi fai raffreddare.

Frulla le fragole con il timo e il latte di mandorla fino a ottenere un composto liscio. Aggiungi le proteine in polvere e la gomma di xantano, mescolando bene.

Versa la crema ottenuta sulla base di frolla cotta, raffredda in frigorifero per 30 minuti.
