Preriscaldare il forno a 170°C e foderare uno stampo cilindrico (Ø 18 cm) con carta da forno.

In una ciotola, mescolare la farina di mandorle, il cacao, l'eritritolo, il lievito e il sale.

Sbattere leggermente le uova con il latte scremato e la vaniglia, poi versare nel mix secco.

Aggiungere l'olio di cocco fuso e mescolare fino a ottenere un impasto omogeneo e cremoso.

Versare l'impasto nello stampo e livellar bene la superficie.

Cuocere a 170°C per 18 minuti: il bolo deve risultare umido al centro ma non bagnato.

Sfornare e lasciare riposare 5 minuti prima di rovesciare su un piatto.

Per la ganache: tritare finemente il cioccolato 85%, riscaldare leggermente la panna vegetale (non in ebollizione), versarla sul cioccolato e attendere 1 minuto, poi mescolare fino a lisciezza.

Se usi proteine in polvere, aggiungile alla ganache e amalgama bene.

Versare la ganache sulla tortina ancora tiepida, livellare con una spatola e trasferire in frigorifero per almeno 1 ora.

Affettare con un coltello riscaldato sotto acqua calda, asciugato bene tra un taglio e l'altro.
