Preriscaldare il forno a 175°C.

In una ciotola mescolare la farina proteica, la farina di mandorle, il cacao magro, il lievito e un pizzico di sale.

In un'altra ciotola sbattere le uova con lo yogurt greco, l'olio di cocco fuso e il succo di mela concentrato fino a ottenere un composto omogeneo.

Versare gli ingredienti umidi negli ingredienti secchi e mescolare delicatamente con una spatola fino a incorporare bene il tutto senza smontare l'impasto.

Distribuire l'impasto in 12 pirottini in silicone o carta, riempiendo fino a metà.

Cuocere in forno per 17-18 minuti finché uno stuzzicadenti inserito al centro esce pulito.

Sfornare e lasciare raffreddare completamente su una griglia.

Nel frattempo, preparare il frosting: unire la ricotta, il burro ammorbidito, lo sciroppo d'acero e il colorante rosso in una ciotola, montare con una frusta fino a ottenere una crema spumosa.

Trasferire il frosting in una tasca da pasticceria con bocchetta a stella.

Decorare 4 cupcake con frosting a rosetta e cacao grattugiato in cima per il tema "vampiro".

Decorare altri 4 cupcake ricoprendoli completamente di frosting e aggiungendo briciole di cacao fondente come "peli" per il tema "lupo mannaro".

Per gli ultimi 4, spalmare frosting sulla sommità e tracciare spirali con il cacao in polvere usando uno stuzzicadenti per il tema "mummia".
