Preriscaldare il forno a 180°C. Rivestire uno stampo da 12 muffin con pirottini di carta.

In una ciotola, sbattere le uova intere con lo zucchero di canna integrale per 2-3 minuti finché il composto non diventa pallido e spumoso.

Aggiungere il burro ammorbidito e mescolare fino a incorporarlo completamente.

Aggiungere la vaniglia in polvere e il latte scremato, mescolando bene.

In una ciotola separata, setacciare insieme la farina 00, la farina di mandorle, il cacao in polvere, la proteina in polvere, il lievito e il sale.

Unire gli ingredienti secchi a quelli liquidi con movimenti delicati dall'alto verso il basso, fino a ottenere un composto omogeneo e senza grumi.

Dividere il composto nei pirottini, riempiendo fino a ¾ dell'altezza.

Cuocere in forno caldo per 20-22 minuti. Verificare la cottura infilando uno stecchino al centro: deve uscire pulito o con poche briciole.

Togliere dal forno e lasciare raffreddare nelle teglie per 5 minuti, quindi trasferire su una griglia.

Per il frosting, montare il mascarpone light e la ricotta fresca con il miele fino a ottenere una crema soffice e omogenea (circa 2 minuti).

Setacciare il cacao in polvere e la vaniglia nel frosting, mescolando delicatamente.

Una volta raffreddati completamente i cupcake, decorare con il frosting usando una tasca da pasticceria o un cucchiaio.
