Preparate una base mesccolando la ricotta fresca con la polvere proteica vaniglia, il miele e l'estratto di vaniglia fino a ottenere una crema liscia e omogenea.

Dividete la crema in due ciotole uguali: a una aggiungete il cacao amaro in polvere e mescolate bene, lasciando l'altra chiara.

Versate il caffè espresso freddo in una ciotolina e aggiungete il liquore amaretto se desiderate.

Immergete brevemente (2-3 secondi) i biscotti nel caffè, uno alla volta, disponendoli in un primo strato su un vassoio rettangolare.

Spalmate uno strato regolare di crema bianca proteica sui biscotti, quindi coprite con un secondo strato di biscotti inumiditi nel caffè.

Distribuite uno strato di crema al cacao proteica e ricoprite nuovamente con biscotti passati nel caffè.

Ripetete i passaggi 5-6 fino a formare almeno 4 strati, alternando crema bianca e al cacao.

Terminate con uno strato di biscotti e coprite il dolce con pellicola trasparente.

Riponete in frigorifero per almeno 2 ore affinché i biscotti si ammorbidiscano e gli strati si amalgamino.
