Method

In un pentolino, porta a ebollizione l'acqua con il burro di cocco, il sale e il dolcificante naturale.

Aggiungi la farina di mandorle setacciata e mescola energicamente fino a formare un impasto morbido che si distacca dalle pareti.

Lascia raffreddare l'impasto per circa 5 minuti.

Incorpora le uova, una alla volta, mescolando bene dopo ogni aggiunta fino ad ottenere un composto omogeneo.

Trasferisci l'impasto in una sac à poche e forma bastoncini di circa 10 cm su una teglia foderata con carta da forno, distanziandoli di 4 cm.

Cuoci in forno preriscaldato a 200°C per 20-25 minuti, finché gli éclair non sono dorati.

Per la ganache, sciogli il cioccolato a bagnomaria.

Scalda la panna di cocco con il caffè solubile fino a quasi ebollizione, quindi versala sul cioccolato fuso e mescola fino ad ottenere una crema liscia.

Lascia raffreddare la ganache per 10-15 minuti, poi trasferiscila in una sac à poche.
