In un pentolino, unire l'acqua, il burro chiarificato, il sale e l'eritritolo, portare a ebollizione.

Aggiungere la farina di mandorle e il cacao, mescolare energicamente fino a ottenere un impasto omogeneo.

Togliere dal fuoco e far intiepidire per 5 minuti.

Incorporare le uova, una alla volta, mescolando bene dopo ogni aggiunta.

Trasferire l'impasto in una sac à poche e formare dei bastoncini su una teglia rivestita di carta forno, distanziandoli di 5 cm.

Cuocere in forno preriscaldato a 200°C per 20-25 minuti, fino a doratura.
