Method

Inizia scaldando 100 ml di yogurt greco 0% a bagnomaria fino a 85°C; aggiungi 20 g di cioccolato bianco tritato e 1 g di gelatina precedentemente ammollata. Mescola fino a completo scioglimento e lascia raffreddare a temperatura ambiente per 30 minuti.

In una ciotola, unisci 30 g di farina di cocco, 10 g di eritritolo e un pizzico di sale. Scalda 100 ml di acqua fino a bollore e versala sugli ingredienti secchi, mescolando bene fino ad ottenere un impasto omogeneo.

Togli dal fuoco e lascia intiepidire per 5 minuti. Incorpora 1 uovo medio, mescolando energicamente fino a ottenere una crema liscia.

Trasferisci l'impasto in una sac a poche e forma 2 bastoncini di circa 9 cm su una teglia foderata con carta forno. Cuoci in forno preriscaldato a 190°C per 12-15 minuti fino a doratura.

Una volta raffreddati, farcisci gli éclair con la ganache al cioccolato bianco e decora con 15 g di fragole fresche tagliate a fettine.
