Method

In una ciotola, sbatti le uova con l'eritritolo e l'estratto di vaniglia fino a ottenere un composto omogeneo.

In un pentolino, unisci l'agar-agar e 200 ml di acqua, mescolando bene. Porta a fuoco medio e cuoci fino a quando l'agar-agar è completamente sciolto.

Aggiungi il latte di cocco e il restante acqua al pentolino, mescolando costantemente fino a far amalgamare il tutto.

Versa il composto di uova nella miscela di latte di cocco e agar-agar, mescolando bene per evitare grumi.

Cuoci a fuoco basso per circa 5 minuti, mescolando di tanto in tanto.

Rimuovi dal fuoco e versa il composto in stampini individuali. Lascia raffreddare a temperatura ambiente, poi riponi in frigorifero per almeno 2 ore per far solidificare.
