Lavare le melanzane, tagliarle in fette longitudinali di circa 5 mm e disporle su un colino. Salare leggermente e lasciar riposare 20 minuti per eliminare l'umidità, poi sciacquare e asciugare con carta assorbente.

Scaldare l'olio in una padella, aggiungere l'aglio tritato finemente e rosolare per 1 minuto, quindi rimuovere l'aglio.

Grigliare le fette di melanzana nella stessa padella, a fuoco medio-alto, 2-3 minuti per lato fino a renderle morbide e leggermente colorate. Trasferire su un piatto.

In una ciotola, mescolare la ricotta greco, il parmigiano, il pangrattato, l'uovo, l'origano, sale e pepe fino a ottenere un ripieno omogeneo.

Stendere ogni fetta di melanzana grigliata, depositare circa 1 cucchiaio di ripieno al centro, quindi arrotolare stretti.

Disporre gli involtini in una pirofila oleata, rivolti con la giuntura verso il basso. Cuocere in forno a 200°C per 18-20 minuti fino a doratura leggera e superficie croccante.

Estrarre dal forno e servire caldi o a temperatura ambiente.
