Preriscalda il forno a 200°C. Taglia il pane integrale a dadini e tostalo leggermente in una padella antiaderente senza grassi per 2-3 minuti.

Trita finemente il prezzemolo e pressa l'aglio. In una ciotola, trita il merluzzo fresco con una forchetta fino a ottenere un'impasto grossolano ma coeso.

Aggiungi al merluzzo: il pane tostato sbriciolato, l'uovo, il parmigiano, il prezzemolo, l'aglio, il succo di limone, sale e pepe. Mescola delicatamente con un cucchiaio di legno finché gli ingredienti si amalgamano senza risultare compatti.

Dividi l'impasto in 4 porzioni uguali (circa 150 g l'una). Forma 4 burger cilindrici pressando leggermente tra i palmi o usando un coppapasta da 10 cm, appoggiandoli su carta forno.

Versa il pangrattato integrale in un piatto piano. Spennella ogni burger su entrambi i lati con un leggero strato di uovo rimasto e rotola nel pangrattato, pressando delicatamente perché aderisca.

Prepara una teglia da forno ricoperta di carta forno. Spruzza leggermente di olio in teflon e adagia i burger, distanziati di almeno 2 cm.

Inforna a 200°C per 16-18 minuti, finché la superficie risulta dorata e croccante. Evita di girare i burger: il forno caldo farà dorar la base naturalmente.

Estrai dal forno e lascia riposare per 1 minuto prima di servire. I burger rimarranno umidi all'interno e croccanti fuori.
