Method

Preriscaldare il forno a 210°C e foderare una placca con carta forno.

Lavare le patate dolci, tagliarle in bastoncini di circa 1 cm di spessore e disporle sulla placca.

Cospargerle leggermente con 5 ml di olio extravergine, sale, pepe e paprica affumicata. Infornare per 20-22 minuti, mescolando a metà cottura, fino a doratura.

Nel frattempo, preparare la pastella: in una ciotola mescolare farina integrale, lievito e sale. Aggiungere l'acqua fredda e mescolare fino a ottenere un impasto liscio e omogeneo.

Asciugare bene i filetti di pesce con carta assorbente e condirli leggermente con sale e pepe.

Immergere ciascun filetto nella pastella, facendo scolare l'eccesso.

Disporre i filetti su un'altra placca rivestita di carta forno, spennellare delicatamente con i restanti 5 ml di olio.

Infornare a 210°C per 12-14 minuti: il pesce avrà una leggera doratura e risulterà umido all'interno.

Togliere dal forno, cospargere con prezzemolo fresco e servire insieme alle patatine dolci.
