Method

Prepara la base: mescola in una ciotola 30g di farina di mandorle, 10g di burro di mandorle, 5g di stevia e un pizzico di sale. Pressa il composto in una piccola teglia da forno e cuoci a 180°C per 10 minuti.

In un pentolino, scalda 150ml di latte di cocco light con i semi di 1/2 bacca di vaniglia fino a sfiorare il bollore, poi togli dal fuoco.

In una ciotola, sbatti 1 uovo intero con 5g di stevia fino a ottenere una consistenza spumosa. Aggiungi 60g di yogurt greco magro e 10g di amido di tapioca, mescolando bene.

Versa lentamente il latte caldo nella miscela di uova, filtrando per eliminare i residui di vaniglia.

Rimetti il composto nel pentolino e cuoci a fuoco medio-basso mescolando continuamente per 4-5 minuti, finché non raggiunge una consistenza cremosa.

Versa la crema sulla base di mandorle e cuoci a 170°C per 10 minuti. Lascia raffreddare a temperatura ambiente e poi riponi in frigo per almeno 2 ore prima di servire.
