Method

Versare l'acqua tiepida in una ciotola e sciogliervi il lievito con il miele, attendere 5 minuti affinché si attivi.

Aggiungere lo yogurt greco, mescolare bene fino a ottenere un liquido omogeneo.

In una ciotola più grande, mescolare la farina tipo 0 con la farina d'avena e il sale fine.

Versare il composto liquido nella miscela di farine e impastare con le mani per 10-12 minuti fino a ottenere un impasto morbido e coeso.

Incorporare l'olio extravergine suddividendolo in due aggiunte, continuando a impastare fino a renderlo elastico e liscio.

Formare una palla, riporla in una ciotola coperta con pellicola, e lasciarla lievitare in luogo caldo per circa 60 minuti fino al raddoppio del volume.
