Method

Sciogliere il lievito in acqua tiepida (37°C circa) insieme a 10 ml di olio, lasciare riposare 5 minuti fino a che risulti schiumoso.

In una ciotola, mescolare la farina integrale e il sale, creare una fontana al centro.

Versare il composto di lievito nella fontana e impastare per 8-10 minuti fino a ottenere un impasto liscio ed elastico.

Oliare una ciotola con 5 ml di olio, trasferirvici l'impasto, coprire con pellicola e lasciare lievitare 2 ore in frigorifero (o una notte).

Foderare una teglia rettangolare (24x28 cm) con carta forno, oleandola con 10 ml di olio.

Trasferire l'impasto sulla teglia, stendere delicatamente con le dita umide in forma rettangolare, coprire e lievitare 30 minuti in luogo tiepido.

Preriscaldare il forno a 200°C.

Mescolare i semi di sesamo, i semi di girasole, lo zaatar e il timo in una ciotola.

Miscelare i restanti 10 ml di olio con il composto di semi e zaatar.

Spennellare l'impasto con la miscela di olio, semi e zaatar, lasciare riposare altri 10 minuti.

Infornare per 20-22 minuti finché ben dorata e croccante.

Estrarre dal forno, lasciare intiepidire su griglia, tagliare in 12 quadrotti e servire tiepida.
