Sciogliere il lievito in 150 ml di acqua tiepida e attendere 5 minuti.

In una ciotola grande, mescolare la farina integrale e il sale fino.

Aggiungere l'acqua con il lievito e mescolare fino a ottenere un impasto semi-umido; incorporare 15 g di olio e lavorare per 10 minuti fino a renderlo liscio e elastico.

Trasferire l'impasto in una ciotola leggermente unta, coprire con un canovaccio umido e lasciare riposare 1 ora a temperatura ambiente (circa 22°C).

Ungere una teglia rettangolare (24x18 cm) con 5 g di olio.

Trasferire delicatamente l'impasto sulla teglia, stenderlo con i palmi (non un mattarello) fino a riempirla, quindi coprire e lasciare lievitare per 45 minuti.

Dopo 35 minuti, preriscaldare il forno a 220°C.

Con le dita umide, affondare l'impasto creando piccole cavità e bolle; cospargere con i semi misti e il sale marino grosso.

Cuocere per 18 minuti fino a doratura leggera e croccantezza dei bordi.

Estrarre dal forno, lasciar riposare 2 minuti sulla teglia, poi trasferire su una griglia.
