Method

In una ciotola, versare l'acqua tiepida e sciogliervi il lievito di birra, mescolando delicatamente. Lasciar riposare 5 minuti.

In una terrina, setacciare insieme la farina, le proteine in polvere e il sale fino.

Versare il lievito disciolto nella miscela di farina e proteine, impastare con le mani per 5-7 minuti fino a ottenere un impasto omogeneo e leggermente appiccicaticcio.

Trasferire l'impasto in una ciotola pulita, coprire con un canovaccio umido e lasciare lievitare in luogo tiepido e riparato per 45 minuti, fino a quando avrà raddoppiato il volume.

Preriscaldare il forno a 200°C.

Dividere l'impasto lievitato in 10 porzioni uguali e modellarle in palline. Con le dita leggermente umide, appiattire ogni pallina su un disco di circa 7 cm di diametro.

Disporre i dischi su una teglia rivestita di carta forno, mantenendo lo spazio tra loro.

Cospargere ogni focaccina con un pizzico di sale grosso e una leggera spolverata di origano secco.

Distribuire 1 ml di olio extravergine di oliva su ciascuna focaccina con un pennello da cucina.

Infornare a 200°C per 16-18 minuti fino a quando le focaccine non risulteranno dorate in superficie.

Estrarre la teglia dal forno e servire le focaccine calde o tiepide.
