In una ciotola, mescola la farina di mandorle, l'eritritolo e la scorza di limone. Aggiungi il tuorlo d'uovo e 20 g di yogurt greco, impastando fino a ottenere un composto omogeneo.

Stendi l'impasto tra due fogli di carta forno, quindi ritaglia dei dischi e posizionali in uno stampo per mini crostate. Bucherella la base e cuoci in forno a 180°C per 12-15 minuti.

Mentre la base si raffredda, monta 30 g di yogurt greco con la stevia fino a ottenere una crema densa.

Frulla la mini crostata raffreddata con il gelato proteico e il latte di mandorla fino a ottenere un composto cremoso.

Versa il frappè in un bicchiere e guarnisci con lo yogurt greco montato, frammenti di crostata e una spolverata di cacao amaro.
