Scaldare il latte scremato a 37°C e aggiungere il lievito di birra con 10 g di zucchero; far riposare 5 minuti fino a ottenere una miscela leggermente schiumosa.

In una ciotola grande, mescolare l'uovo intero, l'albume, il burro chiarificato e la vaniglia. Unire il composto del latte lievitato.

Aggiungere gradualmente la farina integrale, il sale e i restanti 15 g di zucchero, impastando per 8-10 minuti a mano fino a ottenere un impasto elastico e leggermente appiccicaticcio.

Foderare una tortiera da 26 cm (fondo apribile) con carta forno. Trasferire l'impasto nello stampo e livellarlo con una spatola bagnata.

Distribuire sulla superficie della fugassa piccole cucchiaiate (circa 50 g totali) di crema proteica di nocciola, evitando i bordi. Coprire con pellicola trasparente.

Lasciar lievitare in luogo tiepido per 2,5-3 ore fino al raddoppio del volume.

Preriscaldare il forno a 200°C. Spennellare delicatamente la superficie con il latte scremato.

Cospargere uniformemente le mandorle affettate e lo zucchero di canna sulla parte superiore.

Cuocere a 200°C per 28-32 minuti fino a ottenere una superficie dorata e croccante. La fugassa dovrà risultare leggermente morbida al centro.

Estrarre dal forno con cautela e lasciar raffreddare completamente su una griglia prima di scaricare dalla tortiera.
