Method

In una ciotola, mescola la farina integrale, il cacao amaro, lo yogurt greco, il sale e l'acqua fino a ottenere un impasto omogeneo.

Trasferisci l'impasto su un piano di lavoro leggermente infarinato e compattalo, quindi stendilo in un rettangolo sottile. Piegalo in tre parti e ruotalo di 90 gradi. Avvolgilo in pellicola e mettilo in frigorifero per 15 minuti. Ripeti questa operazione un'altra volta.

Sciogli il cioccolato fondente a bagnomaria, mescolando fino a completa fusione.

In una ciotola, unisci il cioccolato fuso con lo yogurt greco e il tuorlo d'uovo, mescolando fino a ottenere una ganache liscia.

Stendi la pasta su carta forno in un cerchio di circa 20 cm di diametro. Spennella i bordi con il tuorlo d'uovo sbattuto.

Distribuisci la ganache al cioccolato al centro della pasta, lasciando 1,5 cm dal bordo. Copri con un secondo cerchio di pasta e sigilla bene i bordi. Decora la superficie con un coltello e spennella con il tuorlo rimasto.

Cuoci in forno preriscaldato a 180°C per 20 minuti, fino a doratura perfetta.
