In un pentolino, porta a ebollizione 100ml d'acqua con 15g di eritritolo. Aggiungi 30g di noci e fai bollire 2 minuti, poi scolale e asciugale su carta da cucina.

In una ciotola, monta delicatamente 2 albumi d'uovo con 1 pizzico di sale fino a consistenza spumosa.

Aggiungi 25g di farina di mandorle agli albumi e mescola fino a ottenere un impasto pastoso omogeneo.

Scalda 50ml di olio evo in una padella antiaderente a fuoco medio-alto. Immergi 120g di gamberi già puliti nella pastella e cuocili in 2-3 minuti per lato fino a doratura dorata.

Asciuga i gamberi su carta assorbente. Nel frattempo, mescola in una ciotola 60g di yogurt greco 0%, 5g di miele, 2g di estratto di vaniglia e pepe bianco q.b.

Trasferisci i gamberi in un piatto, cospargi con la salsa allo yogurt, decora con le noci caramellate e un pizzico di paprica affumicata.
