Riscaldare l'olio in una ampia padella antiaderente a fuoco medio. Aggiungere lo scalogno tritato finemente e rosolare per 2 minuti fino a profumo, mescolando delicatamente.

Versare il vino bianco e lasciar evaporare per 1 minuto a fuoco vivace.
