Preriscalda il forno a 180°C.

In una padella, scalda l'olio extravergine d'oliva a fuoco medio e aggiungi la cipolla tritata; cuoci fino a quando è morbida.

Aggiungi gli spinaci e cuoci finché non si appassiscono. Scola eventuale liquido in eccesso.

In una ciotola, unisci gli spinaci cotti, la ricotta, le uova, il parmigiano, l'aneto, il sale e il pepe. Mescola bene.

Stendi un foglio di pasta fillo su un piano e spennella leggermente con olio; ripeti con un altro foglio.

Taglia la pasta fillo in strisce larghe circa 10 cm. Posiziona un cucchiaio di ripieno all'inizio di ogni striscia e piega la pasta a triangolo, ripiegando su se stessa fino alla fine della striscia.

Adagia i triangoli su una teglia rivestita di carta forno e spennella la superficie con un po' d'olio.

Cuoci in forno per 25-30 minuti, fino a doratura e croccantezza.
