Pressa il tofu tra due piatti con un peso per 10 minuti, quindi taglialo a cubetti di circa 2 cm.

Riscalda l'olio d'oliva in una padella antiaderente a fuoco medio-alto e rosola il tofu per 5-6 minuti, fino a doratura. Rimuovi e metti da parte.

Nella stessa padella, aggiungi la pasta di curry verde e cuoci per 1-2 minuti finché non rilascia il suo aroma, poi incorpora il peperone e la zucchina, cuocendo per altri 3 minuti.

Versa il brodo vegetale e il latte di cocco light, mescolando bene. Porta a ebollizione dolce.

Aggiungi i fagiolini e il tofu, quindi lascia cuocere a fuoco basso per circa 10 minuti.
