Preparare la crema: versare il latte scremato, il latte condensato light e l'amido di mais in un pentolino; aggiungere i tuorli, la bacca di vaniglia aperta e raschiata, e mescolare bene per evitare grumi. Portare a fuoco medio-alto, girando costantemente con un frullino, fino a quando il composto non si addensi (circa 8-10 minuti). Travasare in una ciotola, coprire con pellicola trasparente a contatto e far raffreddare a temperatura ambiente.

Preparare l'impasto per la pasta frolla: in una ciotola, miscelare la farina integrale, la farina 00, il burro light tagliato in piccoli pezzi, l'uovo, lo zucchero di canna, il sale e un pizzico di vaniglia naturale. Impastare delicatamente con le dita fino a ottenere un composto sabbioso; formare un panetto, avvolgerlo in pellicola trasparente e riporlo in frigorifero per 45 minuti.

Preriscaldare il forno a 180°C. Preparare 6 stampini per tartellette (Ø 8-10 cm).

Stendere l'impasto su un piano leggermente infarinato fino a uno spessore di 3-4 mm; ricavare 6 dischi con un coppapasta (Ø 12-13 cm).

Rivestire gli stampini con i dischi di pasta, facendo aderire bene al fondo e ai bordi; bucherellare la base con una forchetta.

Distribuire equamente la crema al latte nelle tartellette (circa 40 g per tartelletta).

Posizionare gli stampini su una placca da forno coperta di carta pergamena e cuocere a 180°C per 22-25 minuti, fino a quando la pasta risulta dorata e leggermente croccante.

Estrarre dal forno e lasciar raffreddare completamente prima di servire.
