Lavare il cavolo rosso e tagliarlo a julienne fine con un coltello o una mandolina, oppure grattugiarlo. Trasferire in una ciotola capiente.

Cospargere il cavolo con un pizzico di sale marino e lasciarlo riposare per 2-3 minuti affinché rilasci i liquidi: questo lo renderà più tenero.
