Portare a ebollizione una pentola d'acqua salata. Aggiungere le patate tagliate in cubetti da 1,5 cm e le carote a dadini; cuocere per 12 minuti.

Negli ultimi 3 minuti di cottura, aggiungere i piselli. Scolare le verdure e lasciarle raffreddare in una ciotola con acqua fredda, poi asciugarle bene.

Immergere le uova in acqua bollente per 9 minuti (tuorlo cremoso), poi raffreddarle in acqua ghiacciata. Sgusciarle e tagliarle a metà.

Frullare il tofu sodo, l'olio, l'aceto di mele, la mostarda e un pizzico di sale fino a ottenere una crema omogenea e fluida; regolare la consistenza con 2-3 cucchiai d'acqua se necessario.

In una ciotola capiente, unire le verdure cotte raffreddate, i peperoni tagliati a cubetti, i cetriolini tritati e 3-4 cucchiai della crema di tofu. Mescolare delicatamente.
