Prepara la salsa mescolando in una ciotola salsa di soia, olio di sesamo e aglio tritato; metti da parte.

Porta a ebollizione una pentola d'acqua salata e cuoci i noodles di patate dolci per 5-6 minuti, fino a quando sono al dente. Scolali e risciacquali sotto acqua fredda.

In una ciotola, condisci i noodles con un cucchiaio di salsa preparata e mescola bene.

In una pentola con acqua bollente, sbollenta gli spinaci per 1 minuto, poi scolali e mettili in acqua fredda per fermare la cottura. Strizza l'acqua in eccesso e condisci con pepe.

Scalda un cucchiaio d'olio in una padella capiente a fuoco medio. Aggiungi la cipolla e cuoci fino a renderla traslucida, circa 2-3 minuti.

Aggiungi i funghi e la carota, cuocendo per altri 2 minuti.

Sposta le verdure in un piatto e nella stessa padella cuoci il pollo fino a dorarlo, circa 5 minuti.

Rimetti le verdure nella padella con il pollo, aggiungi i noodles e la salsa rimanente. Mescola bene per amalgamare il tutto.

Servi caldo, guarnendo con semi di sesamo tostati.
