Preriscalda il forno a 180°C e rivesti una teglia con carta da forno.

In una ciotola, mescola l'uovo con lo yogurt greco e la stevia fino a ottenere un composto cremoso.

Aggiungi la farina di avena, le proteine in polvere, il lievito e il sale, mescolando bene fino a formare un impasto omogeneo.

Dividi l'impasto in due parti e forma dei rotoli lunghi circa 15 cm.

Taglia dei pezzi di impasto e arrotolali in strisce sottili, quindi forma delle figure a "8" unendo le estremità.
