Method

In una ciotola, mescolare la farina di mandorle, i pistacchi tritati e l'eritritolo. Setacciare il composto per eliminare eventuali grumi.

Montare gli albumi a neve fermissima con un pizzico di sale. Aggiungere lentamente il composto di mandorle e pistacchi, mescolando delicatamente con una spatola fino a ottenere una massa omogenea.

Aggiungere il colorante verde e mescolare con cura fino a raggiungere il colore desiderato.

Rivestire una teglia con carta da forno e, utilizzando una sac à poche, formare dei piccoli cerchi di circa 3 cm di diametro.

Lasciare riposare i macarons a temperatura ambiente per circa 30 minuti.

Preriscaldare il forno a 140°C e cuocere i macarons per circa 12-15 minuti, fino a quando non saranno sodi e leggermente dorati.

Nel frattempo, preparare la farcitura mescolando la crema di pistacchio con l'olio di cocco fino a ottenere un composto liscio.

Una volta cotti e raffreddati, farcire i macarons con la crema di pistacchio e unire le metà. Servire e gustare!
