Method

Inizia separando gli albumi e ponendoli in una ciotola metallica. Lasciali riposare in frigorifero per almeno 12 ore per stabilizzarli.

Il giorno seguente, porta gli albumi a temperatura ambiente.

Preriscalda il forno a 140°C e rivesti due teglie con carta da forno.

In una ciotola, setaccia insieme la farina di mandorle, il cacao e il dolcificante.

In un'altra ciotola, monta gli albumi con il sale usando un mixer elettrico a velocità media fino a ottenere una consistenza schiumosa.

Aumenta la velocità e aggiungi il dolcificante un cucchiaio alla volta, continuando a montare fino a ottenere picchi fermi e una meringa lucida.

Incorpora delicatamente il mix di farina di mandorle e cacao agli albumi montati, mescolando con una spatola fino a ottenere un composto omogeneo.

Trasferisci l’impasto in una sac à poche e forma dei dischetti di circa 3 cm di diametro sulle teglie preparate, lasciando spazio tra di essi.

Batti leggermente le teglie sul piano di lavoro per eliminare le bolle d'aria e lascia riposare i macarons a temperatura ambiente per circa 30 minuti, finché la superficie non diventa opaca.

Inforna i macarons per circa 20 minuti, fino a quando non risultano asciutti al tatto.

Lascia raffreddare completamente su una griglia prima di staccarli dalla carta forno.
